One of the meals that I was so excited to try in my Instant Pot was short ribs.

Instant Pot Short Ribs

The Instant Pot is perfect for creating tender, perfectly cooked meat dishes because of how it uses pressurized cooking.

This way you can have a five-star dining experience at home that’s ready in under an hour!

Rather than cooking for hours in a conventional oven or slow cooker, the cooking time for this Instant Pot Short Ribs recipe is 35 minutes! It becomes so fall-apart tender when it’s done.

Why Paleo?

I chose to make this version of Instant Pot Short Ribs without premade sauces or refined sugars in order to come up with a version that is full of healthy, whole ingredients.

Most premade sauces are full of sugar, high sodium, gluten, corn starch/syrup, soy, and other harmful ingredients. These ingredients can irritate digestion, create inflammation, and have a negative impact on existing health issues.

Worchester sauce is a savory flavor enhancer that can be swapped out for real food ingredients. For a recipe using 4 lbs. of short ribs I used the following measurements:

Paleo Worchester Sauce

  • 2 T. Apple Cider Vinegar
  • 1/2 T. filtered water
  • 1 T. Coconut Aminos
  • 1/8 t. Mustard powder
  • 1/8 t. Onion powder
  • 1/8 t. Garlic powder
  • 1/16 t. Cinnamon
  • 1/16 t. Black pepper

I didn’t use wine in this recipe, but you could substitute 1 c. red wine for the second cup of beef bone broth.

Serving it up

Our favorite way to eat this tender meal is over mashed potatoes. It’s a perfect combination of flavors and texture.

Specifically, we like to make roasted garlic mashed potatoes. Before you start your short ribs, put 3-5 garlic cloves on a piece of foil, drizzle with oil, and roast at 400 degrees for 30 minutes.

When your short ribs are cooking, bring water to boil and prep 2 lbs. organic red potatoes. Cut into 1 inch pieces. Boil for 8-10 minutes, until fork tender.

Drain water, mash potatoes with a hand masher.

Add about 1/2 c. chicken stock or whole milk, 4 T. butter/ghee, 1 t. sea salt, 1/2 t. pepper, and your roasted garlic cloves. Continue mashing together until you have the desired consistency.

Instant Pot Short Ribs

Prep Time: 10 mins
Cook Time: 35 mins
Serves: 4-6

Ingredients

  • 4 lbs. Beef Short Ribs (pastured, grassfed)
  • 1 t. Sea salt
  • 1/2 t. Black pepper
  • 1 T. Olive oil, avocado oil, or ghee
  • 2 1/2 c. diced onion
  • 2 t. Garlic, minced
  • 2 T. Apple cider vinegar
  • 1/2 T. water
  • 1 T. Coconut aminos
  • 1/8 t. Mustard powder
  • 1/8 t. Onion powder
  • 1/8 t. Garlic powder
  • 1/16 t. Cinnamon
  • 1/16 t. Black Pepper
  • 2 T. Maple syrup
  • 2 c. Beef Bone Broth (Beef Stock) (or 1 c. Beef Bone Broth & 1 c. Red Wine)
  • 2 sprigs fresh thyme

Directions

  1. Cut short ribs apart (if needed). Sprinkle ribs with 1 t. salt and 1/2 t. pepper.
  2. Set Instant Pot to saute, add oil.
  3. Add ribs to pot and sear the outsides. Remove to a plate to cook onions.
  4. Saute onions until translucent. Add garlic and cook one more minute.
  5. Add ribs back to pot. Turn off Instant Pot to combine the rest of the ingredients.
  6. Whisk all other ingredients (except thyme sprigs) in a separate bowl. Pour over ribs. Add thyme sprigs on top of ribs.
  7. Lock cover into place and seal steam nozzle.
  8. Set to meat/stew setting or set manually for 35 minutes (add more time for larger quantities of ribs).
  9. Let the pressure release naturally for 5-10 minutes then quick release remaining pressure.
  10. Remove thyme sprigs. Serve short ribs over mashed potatoes or other vegetables with a few tablespoons of the sauce on top.
