Vanilla Cupcakes (Paleo, Grain-free, Dairy-free, & Nut-free)

Grain-free Vanilla Cupcakes with extra vanilla

Two ingredients to add to your paleo/grain-free baking cabinet are pure vanilla extract without any added sugar and pure vanilla bean powder.

Two sweet additions with so many uses!

Pure Vanilla Bean Powder

Pure vanilla bean powder is excellent for baking, adding to smoothies, or in lattes like my vanilla latte mix.

It makes an excellent whole30 compliant vanilla latte by adding 1/4 t. pure vanilla bean powder to a cup of hot coffee with 1/4 c. coconut cream then blending until frothy.

Making Vanilla Extract

Unfortunately, so many store-bought vanilla extracts contain sugar or syrup. I like to make my own vanilla extract with vodka and vanilla beans, it also makes a great Christmas gift!

To make vanilla extract, I use 2-3 vanilla beans per cup of vodka. Make a slit down the bean pod and add to bottle of vodka.

After steeping for at least 8 weeks, it should be an amber color and be ready to use. Store in dark colored bottles like these: 4 oz. Amber Glass Bottles.

Creating a grain-free/paleo cupcake

After making Paleo Red Velvet Cupcakes that really shocked me with how delicious they were and tasted better than the usual kind made with dye and conventional ingredients, I had to try making a vanilla cupcake!

It took a few trials with some tests that didn’t turn out very well, but finally I found the winning combination. The blend of cassava flour and arrowroot powder creates the balanced texture that is soft and moist but not too chewy.

As you make these, the state of your ingredients is key. For instance, the coconut oil should be melted, but not too hot so it doesn’t cook your other ingredients.

Paleo/Grain-free Vanilla Cupcakes

Ingredients

  • 1 c. 2 T. Cassava Flour
  • 1/4 c. Arrowroot powder
  • 1/2 t. Sea salt
  • 1/2 t. Baking Soda
  • 1 t. Cream of tartar
  • 1/2 t. pure vanilla bean powder
  • 1/2 c. Coconut oil, melted (but not hot)
  • 1/2 c. Pure Maple Syrup (room temperature)
  • 1/2 c. Coconut Milk (room temperature)
  • 1 T. Pure Vanilla Extract
  • 2 eggs

Directions

  1. Preheat oven to 375 degrees.
  2. Stir dry ingredients together (cassava flour, arrowroot powder, sea salt, cream of tartar, baking soda, vanilla bean powder).
  3. In a separate mixing bowl, mix melted coconut oil, maple syrup, milk, and vanilla. Beat in eggs.
  4. Slowly stir in dry ingredients.
  5. Use cupcake liners or lightly grease muffin/cupcake tin with coconut oil and fill 3/4 full with cupcake batter. Bake 14-15 minutes until cupcakes are set and a toothpick inserted into the middle comes out clean.
